Avocado toast with ricotta cheese

Ingredients
  • 1 slice of brown bread
  • Extra-virgin olive oil
  • 1/2 medium pitted and peeled avocado
  • Freshly squeezed lemon juice to taste, from 1/2 lemon
  • 4 to 5 tablespoons of ricotta cheese
  • Thinly sliced basil leaves, for garnish
  • Sea salt and freshly ground black pepper
Directions
  1. Lightly brush bread with extra-virgin olive oil
  2. Toast to desired level of doneness
  3. Top with avocado and mash with a fork
  4. Squeeze lemon juice
  5. Add ricotta on top
  6. Drizzle with extra-virgin olive oil
  7. Sprinkle with basil, lemon zest, sea salt, and pepper
