Lasagna Roll

Ingredients
  • 800 grams pasta sauce
  • 450 grams of uncooked lasagna
  • 425 grams ricotta cheese
  • 300 grams frozen spinach – (Thaw, drain and squeeze dry)
  • 2 cups parmesan cheese – grated
  • 450 grams mozzarella cheese – shredded
  • 450 grams tofu
Directions
  1. Preheat the oven to 180 degrees Celsius.
  2. Take a large pot of water and bring to a boil after adding a little salt. 
  3. Add the lasagna noodles and cook for about 6 to 8 minutes until it is slightly underdone. Drain the noodle and rinse. 
  4. Take a large mixing bowl and add the mozzarella cheese, ricotta cheese a cup of parmesan cheese, spinach and the tofu. Mix all the ingredients well. 
  5. Take the rinsed lasagna and lay out a noodle. Spread an even layer of the cheese mixture followed by a thin layer of sauce. Roll the noodle and place the seam side down on a medium pan. 
  6. Repeat the process for all the other noodles and add the remaining sauce and parmesan cheese on top after placing all the rolls in the pan. 
  7. Bake the rolls in the oven for 30 minutes until it is hot and bubbly.
